Welcome to Gallagher's Grub! I've been an avid griller and cook for over 20 years. I currently own a Kamado Joe, Weber Kettle, Napoleon gas grill, Weber Q2200, a classic Weber Genesis 1000, and a Weber Go Anywhere. I also love French and Italian cooking.
I currently live in New York City, and have a weekend getaway in Connecticut where I do my grilling.

Flame grilled all day
Best way to do this test would be to season one steak evenly and then cut in half and grill one on each service. This way you’ll have an even amount of salt.
I was having problems in playing your video on my iPad when about half way through. It kept rotating a loading symbol. Finally got it to work by pressing the flower(?) symbol and adjusting the speed to 1080.
Normally, recipes using cast iron pans call for the pan to be preheated before adding the food in order to avoid thermal shock, cracking and distortion. Is this a concern with this recipe? I intend to use it with a 5”x 8” oval heavy cast iron baking dish for one chicken thigh or breast. Best wishes from Ontario, Canada.

Actually, I would recommend starting and searing the steak on both sides with the grates then finishing them off on the griddle to avoid over burning.

You're the first person I've ever seen that made a Bubba Burger actually look really REALLY good. Anytime I've had one that someone else has cooked it's coal black and crunchy on the outside, dark grey and dry on the inside. Well done! (No pun intended) Just bought this grill based on this video...and I'm not kidding.

Thats the worst sear I've ever seen done on a charcoal kettle.
I have a 26 and 2-22s. You nailed the differences. You can adapt the Spider Venom to fit it also. The leg welds should have been designed stronger.

just a heads up for your viewers. If you buy a new 26" today, they no longer come with baskets. It has a "charcoal rail" instead. It clips onto the charcoal grate.
...if only my wife did not keep track on my grills. Maybe I could swap my 22 to a 26 without her noticing? How much more charcoals does the 26 need vs the 22?
Pretty much the same. or As much as you want to use! lots of space on the 26. LOTS of space.
Howdy, great to see you back at the cabin. Yes sir that 26" is nice. I'd like to get one someday. But I have four 22" so probably not. Keep the 22" , you never know when you need more grilling space( try baking a pie in the 22" when grilling with the 26") Anyway big news. I actually did a introduction video a couple of months back. I've tried doing a few more but honestly I don't like using my cell phone as a camera. I'm planning on getting a dedicated camera soon though so hopefully I'll be getting going regularly soon. I need a 26" inch weber. Have you checked out the Huntsman Spider Grill? They also make a blower for the Weber for temperature control.
I'd say the 26-inch is kind of amazing. Really enjoying it. Got it from someone who had sold their home and was moving. What a score! I haven't seen the Huntsman Spider Grill. I'll check it out. Cheers!

Did that charcoal last the whole cook or did you top them up?
I have a Weber Q 1400 electric grill, (can't have gas) and I got the griddle insert. Not a good choice for electric grills. Regular grates work very well, for an electric. The griddle, not so much.

American Brats you buy at the grocery store (Johnsonville etc.) are MUCH more greasy than those you would be from a good German butcher.
Fresh meat from the butcher is superior to pre-packaged meat at the grocery store. Who'd a thunk it?
@@GallaghersGrub The sad part is that “craft” sausage is not a thing. I was born in 1960 in New Jersey and throughout my childhood I remember visiting countless Mom and Pop butcher-sausage shops that sold German and Eastern European pickles cookies candy and holiday specialties. Sadly a few exist today and we are left with fatty flavorless factory made garbage. Fortunately, we have one here in the Puget Sound area. I really need to take a trip down there and stock up.
I did short ribs on my Weber Kettle a couple weeks ago using the snake method. Seasoned with SPG. Sooo good!

It is a great grill. I just picked up a 26-inch kettle, and will have a video comparing that to the master touch in the coming week. Stay tuned.
I’ve never needed tongs, but the list is great otherwise. Im hoping the LP small canisters fit my needs. Just picked up a 1200 Monday. Really want the griddle as my first purchase, good for boneless chicken breast, turkey burger and lean ground beef so it doesn’t dry out.
